A Recipe Three Generations in the Making

Our tom yum noodle soup traces its roots to Si Sa Ket, a small farming city in northeast Thailand's Isan region, where our head chef Viradee Pissara first encountered this dish at her older sister's street food stall in the 1980s. Back then it was served in small portions — quick, bold, affordable fuel for Thai locals on their way to work.

Viradee spent her life refining this recipe. From Si Sa Ket to Bangkok, where she built a career as a jewelry designer. Then to Phuket, where she opened her own restaurant and fused the bold Isan flavors of her childhood with the heartier, richer Southern Thai cooking of the coast. And now, to Orlando, where she brings both traditions together in a single bowl.

The version we serve today is adapted for American portions — heartier, fuller, built for a dining experience rather than a street-side grab-and-go. But the soul of the dish, that two-day broth, those carefully chosen aromatics and proteins, the flavor journey from sweet to sour to spicy — that is unchanged. That is Viradee's life's work in a bowl.
